There are quite a few different types of arrows, and each sort of have their own purpose. But how do I pick the right one out of my quiver? Does I always pick the arrows from my first slot or from the last or just random? I don't really have time to rummage through my stock when the elk is making a dash for the underbrush.

The game will use the last one you "touched" with your mouse.
Remember my post about using your Hotkey bar for ammo counters?
If you put one up for each ammo type, you can switch by clicking / typing the appropriate key as well as keep track of totals.
Also, if you have two stacks of one type, the game and the hotkey ammo counter will automatically switch to the next stack of that type if the first is depleted.
I do not believe it will switch to a different type for you though.
